I love this quick, easy and nutritious snack!

Avocado with the seed taken out makes the most perfect little vessel for holding other goodies.

In this version I have used diced apple with sunflower seeds and pepitas (pumpkin seeds).

The avocado and seeds are a source of lots of heart-loving monounsaturated and polyunsaturated fats.

This really is a powerhouse of goodness! The seeds contain an abundance of essentials minerals such as zinc, magnesium, copper; as well as vitamins B & E. 

Apples are a high fibre, low glycaemic fruit also packed with vitamin C and minerals. Sometimes I think that with all this talk of super foods from far away places, the most simple things such as apples, are forgotten about.

Do keep in mind that this is a rather calorie dense snack, but it will keep you full for longer so chances are, your meal following this will be smaller anyway.
